Indeed, the maximum virtual disk size in order to be able to take snapshots is ~2,032GB (see "Calculating the overhead required by snapshot files" at http://kb.vmware.com/kb/1012384). With that said, there's currently no workaround other than to reducing the virtual disks (e.g. using the Converter) and Thin Provisioning doesn't help either, because it's the provisioned disk size which counts, not the physical .vmdk file size.
If you are running the hosts in a cluster (i.e. using the vSphere Web Client), another option might be to wait for vSphere 5.5 to be released, which supports virtual disks with up to 62TB with snapshots. I'm not sure which options will be available in the Windows based vSphere Client with the free Hypervisor edition.
